Eliminate meat: How strict do you want. For instance a vegan diet eliminates all products derived from animals such as eggs, cheese, milk, etc. Ordinary vegetarian eliminates only meat and direct meat products. There are many cookbooks in any bookstore on good recipes, and you can google "vegetarian diet" on the internet for helpful suggestions.

<20%: All foods are made up of carbohydrates, proteins, and fats. Current recommendations for adults are diets composed of 45-65% carb, 10-35% protein, and 20-35% fat. Low carb is usually understood to mean <20% carb but can just mean a restriction in carb content.
