If water appears white on mri why does fat also appear white? (as fat is hydrophobic)

Different scans: An MRI study is made up of several individual scans of the body part. Some scans image anatomy in different orientations (cross sections vs. Sagittal - like attached image). But other scans change scanning parameters to display different tissue properties. It is very complicated, but simply stated - t1 weighted images have bright fat; t2 weighted have bright water.
