Go back to doctor: Impossible to tell what is transpiring here without an examination. There may have been damage done during the prior endoscopy, you may have had progression of an ongoing process or may have developed a new problem. You should get this worked out asap, and hopefully before you aspirate and develop pneumonia.

Stricture: Esophageal stricture would likely takes many months or years to form. Sounds more like possible reflux. You likely would not be able to tell that food would move slowly through your esophagus either. Go back & see your gastroentwrologist again. May need esophageal manometry testing to see if the esophageal muscles are working properly.
