Essentially All: Vitamins are just simple helper molecules present in nearly all foods to extent humans have not maintained every gene/protein needed to make them out of whatever other molecules. Their role is helping specific protein enzymes facilitate specific chemical reactions to progress rapidly at body temp which are otherwise inordinately slow. Unclear what you are asking & the purpose/goal of your question.
