Good question: You may have lactose intolerance or sensitive to one of the ingredients of nacho and melted cheese, even the preservative can cause it. Avoid any food that causes you symptoms and consult your physicisn.

Symptom triggers: Processed melted cheese has enough lactose remaining to trigger symptoms in some people. The trigger factor would be additive to any other triggers you ingest. Your best protection is to keep a mental (or actual) food diary and learn what sets you off, and avoid them.
