In one study of 3583 people taking PPIs, 25% developed c diff infections while on PPIs and 33% of these infections occurred after stopping the PPIs anywhere from days to 6 months later. The study didn't specify how long each patient took the PPIs, but many clinicians feel that it takes several weeks to change the bacterial composition of the intestines which predisposes to c diff infections.
