I would be sure to get its core temperature up to 185 F if baking or fry it well. The expiration date is more their date it would retain its best taste that a sign it would turn toxic. I would cook and eat it in that setting.

If the chicken is kept in the freezer section below 0°F I do not see any problem of eating after the chicken is well cooked. If it is left in the fridge section at 36 -38°F, I would advise not. Take care!
