Oils from vegetables are mainly unsaturated fat so they are safe to use.

Not so easy to evaluate all of this, but in general, some oils are far better than others. Olive oil is acknowledged as the "healthiest" and the Mediterranean diet is thought to be of great value. Coconut oil has received a bad "rap", and is likely now considered valuable. I personally would use very little, if any, canola oil, as the impact is unclear, and studies flawed.
