What type of tests would a gi doctor order in reference to pancreatic cancer, also is back pain a symptom. thanks?

There are multiple basic and specialized blood tests that are usually done. Also the imaging of the pancreas can be done through CT scan, MRI and also a specialized test that is done through a scope called an ERCP. A GI doctor has many other modalities to evaluate the pancreas but these are few to begin your consideration.
