CBC could be mildly abnormal with profound dehydration. So could certain blood chemistry tests. If you're feeling well and outwardly healthy, you are not sufficiently dehydrated to be by any blood test. In that case, the only lab test that might be slighly abnormal is urinalysis (in particular, urine specific gravity).

May be, if RBC could talk. There are easier way to ascertain if a person is dehydrated. Reduction in urine output and dark colored urine does not need any tests. For healthy diet: http://www.choosemyplate.gov/., exercise 30 minutes/day, drink enough water daily so your urine is mostly colorless, have safe sex, no tobacco alcohol weed or street drugs.
