Variable: Rather than try to predict, try some simple testing for yourself. Avoiding caffeine, alcohol, and tobacco, try reintroducing normal food. Fats shouldn't be a problem but you're wise to avoid acids like cola, aspirin, or Advil. Famotidine, omeprazole, and simple antacids like gaviscon, mylanta, or tums are very helpful too. Don't eat or drink (even water) within 3-4 hours of lying down for bedtime.

Esophagitis: I am glad you have made some dietary changes. For esophagitis to heal it can take anywhere from 4 -12 weeks provided you are sticking with the dietary changes. Once it has healed, it can come back if you go to your previous life style, since that is what caused it in the first place. You should continue with dietary modifications and consume them in moderation. Exercise regularly and sleep well.
