Good question: The grain, e.g. Rice is just starch. Mother nature surrounded the grain with a cusp that contains the vitamins to metabolize the starch. That is why whole grain bread is nutritious while white bread provides only calories. In my view, even vitamin enrichment of white bread is not sufficient to meet demand.
