does an echocardiogram show fat and scar tissue on the heart?

Not exactly: An Echo gives a good picture of the size and surface of the heart. The valves are well visualized - scar tissue is not directly seen as much as inferred by abnormal movement in an area that may have had previous scarring from infarction.
