Is it normal for doc to order bloodtest to check allergens (gluten), are they able to check for other abnormalities for intestinal issues?

Hard to comment : With no context. All tests are ordered based on clinical suspicion derived from history and physical exam. If you feel you might have forgotten to mention things to your physician or have specific worries make sure you keep communication open with your doc.

Yes: There are different tests to assess different functions and different disorders, e.g., IgA antibody to tissue transglutaminase for celiac disease, ANCA for inflammatory bowel disease, vitamin A for fat malabsorption etc.
