Many options: There are a lot of options for healthy breakfasts that don't involve meat or eggs: -Oatmeal topped with fruit and/or nuts -Smoothies made with non-dairy milk, protein powder or peanut butter, and fruit. -Meatless breakfast burrito (can make yourself or buy frozen option--sometimes they use tofu as replacement for eggs) -Tofu scramble with vegetables (treat tofu as though it's eggs)
