Have had lipase levels checked with routine bloodwork. it fluctuates each time it's taken - is it normal for serum lipase to fluctuate day to day?

Not unusual: It is not unusual for a serum lipase level to fluctuate daily. It is only of any concern if it is greatly elevated and agrees with the clinical presentation of pancreatitis. Otherwise, I would not worry about it. Good luck.
