See below: Honey is same as sugar, go easy on it. Vitamin D levels need not be tested any sooner than three months, you may wait 6 months after start of treatment. Though you do not need to test at all. You may take 2000 units of vitamin D3/daily and there would be no need to repeat the tests.

It depends...: Manuka honey is a natural antimicrobial and can also kill friendly flora, so I wouldn't take it routinely but to treat infections, at which time up to 1 tsp 3x/day is safe- see http://tinyurl.com/gsdpjlt Optimal levels of D are 50-80; most adults need 5-8000 iu/day to get there. After taking about 3 months can recheck, then adjust if needed.Once you're at a good level maintain dose,check yearly.
