Less is more!: Many of the beneficial nutrients/antioxidants in green tea are delicate compounds; heating them too much/too long destroys them! It's best to steep just 1-3 minutes at about 160 degrees, though steeping in room temperature or cold water for 2 hours may be best! See http://tinyurl.com/hodhon5 for details.
