Though more often: associated with dairy products, curdling can happen to any mixture where solids, such as fat and protein, are suspended in liquid. Coconut milk can curdle at high heat; it can turn into a thin, watery liquid mixed with white lumps. It can be avoided with gentler cooking and stirring. Curdled coconut milk is not dangerous..it can be returned to a less lumpy state by cooling and stirring.
