Is it normal for tour neck muscles/ bones to feel asymmetrical if you have mild scoliosis? would they stand out more on one side?

Yes: Yes, to some extent. Most cases of scoliosis have what is called a primary curve; and then often above and below the curve are compensatory curves that try to bring the head and trunk back over the pelvis. So a lot of patients with scoliosis will have a compensatory curve that goes into the base of the neck and can cause what you are describing.
