Abnormal taste/smell: I would have your Mom see a Neurologist. A Neurologist is a doctor that deals with abnormalities of the brain and nerves. Our sense of smell and taste are controlled by nerve centers in our brains. It may be a good idea to consult with your mother's dentist as well.

What procedure ?: It is very, very rare to have nerve damage following any dental procedure. And abnormal in what way? Can she not taste or smell anything, or are her sense altered? The only thing I can think of is the placement of a maxillary denture, but that's not uncommon, and her dentist can explain that to her.
