No need, no worries: Raw or undercooked pork is not unsafe. That's an old belief because of trichinosis, a serious parasitic disease that once was common in pigs but has been eliminated from commercial pork (in North America and Europe) for over 60 years. Out of habit, people still tend to cook pork well, but from a health standpoint there's really no need. (I grill pork chops medium or even medium rare. Yum!)
