Mostly fats: Saturated fats predispose to an inflammatory state, in part, by promoting obesity. Some the lectin may induce mild inflammation in the intestine, such as that caused by kidney beans, but this type of inflammation is not harmful, just caused flatulance and loose bowel movement. Some proteins in meats, such as carnitine, may be altered by bacteria in the gut to pro-inflammatory substances.
