If saturated fats are a concern, why does an all plant based diet not warn about all the saturated fat in nuts and seeds?

Depends: Not all saturated fats are bad. Coconut oil, which is saturated, is very healthy. The saturated fat makes it very stable for cooking with, with little lipid peroxide formation. (lipid peroxidation is bad). Also, coconut oil is high in medium chain fats, which are preferentially burned for energy than stored as fat. Coconut oil can actually help people lose weight.

Some do.: Some people do suggest avoiding nuts and seeds, especially if you have heart disease. Of nuts, walnuts are probably the most healthy. Chia seeds have a favorable omega 3 vs 6 profile.
