Can't say: No one can give you odds but your risk increases every time you are exposed, especially if she has outbreaks. It is not a good idea at all to have unprotected sex when one partner has outbreaks.

You have it: Not everybody who is exposed becomes overtly symptomatic, but if you have been having sex regularly with somebody who has outbreaks the odds are overwhelming that you have been infected. You may get an outbreak at sometime in the future or never see it. If you want to be certain then do not have unprotected sex.
