YES IN HIGH DOSES: If you have a steady diet of fermented foods, such as kimchi, there have been studies which show a relationship to gastric cancer. But , if you eat a balanced, diverse diet with occasional intake of kimchi or other fermented foods, you won't take on much risk. Remember, the dose makes the poison. Not associated: While there are certain diets and geographic locations associated with the development or risk if gastric cancer, kimchee is not a well known one. Asian diets when living in asia do seem to portend a higher risk. When people move to western countries though the risk seems to decrease. Nitrates are also a risk associated.
