Is it normal to have a sharp pain during a bite adjustment on a tooth with a filling? then intermittent less severe sharp pain when biting after?

Biting pain: Yes, anytime you work on a tooth you can have irritation of the nerve. Typically it is a reversible pulpitist and easily treat with anti-inflamatories . If the pain does not steadily decrease then further treatment may be needed such as root canal treatment.

No: It sounds like you have an undiagnosed crack.. Have an endodontist who has an operating microscope look and evaluate the tooth. All teeth have superficial cracks. It is only when cracks deepen that symptoms appear.
