Did you get burned?: Sometimes people eat very hot foods very fast . If the soreness is in the area of your molars, near the gum line where the teeth meet the gum, its probably a burn from that. Its always good to see a doctor just to be sure. Sometimes these burns can take 1-2 weeks to resolve, depending on the severity and the area affected.

Many things...: An inflamed palate could be a sign of many things, most of which are not a worry. Believe it or not, the largest reason i see inflamed palates is a pizza burn. Eating hot pizza, the cheese burns the roof of the mouth and can be quite painful for a few days. If it persists, see a dmd/dds.
