Yes: When you don't have thyroid medicine, your pituitary doesn't get the feedback shutdown message the hormone normally gives it, and it tries to prod the thyroid along. This is why those who are hypothyroid get a goiter. A week is not that long, usually takes a bit longer, but if control was a little off beforehand, a week could very well do it.
