This : This is most likely the prominent ridges of bone between the sockets where the teeth were. This bone will smooth out over time. Though bone is typically smoothed after full mouth extractions, you do not want to remove an excessive amount because the denture requires adequate height and width of bone for retention. I may also be the knots of the stitches if they were place. Suggest you ask this question of your surgeon during your follow-up appointment.

Often : Often pieces of bone called sequestrum can continue to chip away after teeth have been extracted. These can be removed by you or you can be seen by the surgeon, and they may take some time to fully go away. It doesn't always happen, but it sometimes does.
