Muscles, jaw or??: Your headaches may or may not be related to your chewing gum. Some common causes of headaches are dehydration, stress, circulatory issues, and the overuse of your jaw and facial muscles and jaw joints (tmj). Limit your chewing of gum and if it goes away you've solved the problem. However, if it continues or is a chronic problem, you should discuss these issues both with your dentist and physician.

TMJ / TMD: The muscles of the head and neck are very often responsible for headaches and migraines. If you have an underlying TMJ (jaw joint) or muscular problem (like clenching/grinding) chewing gum can trigger a headache. I would recommend seeing a dentist that works with a lot of tmd patients.

Depends on severity: If you consider chewy foods- gum, candy, taffy, etc., then non chewy foods will be the type don't tax your jaw joints too much during function. I would look up food consistency charts on the web and get some answers.
