Go easy on fat.: Don't be scared, you'll be fine; you just have to watch what you eat a bit more carefully. Avoid high-fat foods, fried and greasy foods, and fatty sauces and gravies. Instead, choose nonfat or low-fat foods. Eat smaller, more frequent meals. Include small amounts of lean protein, such as poultry, fish and nonfat dairy, at every meal, along with vegetables, fruit and whole grains.

Usually no problem: Bile is used by your gut to absorb fat; left unabsorbed, fat will cause diarrhea. The gallbladder's job is to store bile & deliver it to the gut after fatty meals; however, the liver produces the bile & bile will still get to the gut w/o a gallbladder. Therefore, most people have no problem digesting fats after surgery; for those that do, it often improves in time.
