How long does it take for a mild cataract to severely affect your vision?

Could be years: It depends on the type of cataract. The most common one is age related nuclear sclerotic cataract. This will take 20-30years before it become visually significant that may requires surgery .

All different: It is different for everyone. Typically cataracts progress slowly. "mild" is and assesment or opinion, and all doctors may use or mean different things by "mild". You should have symptoms that are not corrected by glasses and causing problems with your daily activities to consider surgery.
