No: Actually chewing gum stimulate saliva production which increases ph of saliva and is good for preventing decay or cavities.

Not ususally: But, if you were using a sugar gum and the buffer capacity of your saliva was decreased then you would be producing saliva that couldn't buffer increased sugar. Sugar free gum should take care of that problem, especially xylitol.
