Oral Surgeon: A broken jaw may be treated when a patient has not teeth. More information would be required such as how the jaw was broken, where the breaks are and severity of the breaks. Specific xrays would be required etc. The best person to determine the options for treatment would be an oral maxillofacial surgeon and preferably the treating surgeon. Visit a surgeon as soon as possible after the trauma.

Depends: Treatment for a fracture of an edentulous (no teeth) jaw will depend upon where the fracture is, what type of fracture is present, the anatomy of the broken jaw. And the expertise and training of the surgeon providing treatment.

Plates vs dentures: If you have dentures, these can be wired to your jaws and then the dentures wired together. Another options is to use plates and screws to hold the fracture together. See a board certified oral & maxillofacial surgeon to manage jaw fractures.
