They Do Not: The bacteria do interact with foods to create acids that attack the teeth and cause decay and gum disease if you do not clean properly. Inflamed gums are the start of gum disease. If you are saying your entire mouth is inflamed then you need to see your md to check for allergies to food or materials.

They don't: Once set, filling materials are chemically inert and do not interact to any extent with spices in your food. The inflammation in your mouth is coming from another source.
