Adjust for a while : When cholesterol "stones" form in the gallbladder they can block the duct, causing pain. The nomal action of the gallbladder is to release bile after you eat fatty or oily foods. Stones prevent this release, and without bile, fat is poorly digested. Before + after removal of the gallbladder, the diet is the same, low fat, low oil. People do recover after a time and can go back to normal in 6-12m.

Anything: Most patients can eat anything after their gallbladder is removed. A very rare problem is post-cholecystectomy syndrome where patients will have diarrhea or loose stools after certain foods.
