Slower vs fast: Sauteeing involves cooking meat using a small amount of oil or fat but you can cook the meat in its own fat or juices without adding extra oil or fat. Whereas pan frying involves heating a piece of meat quickly and frying on both sides at hot temperature. It involves using greater amounts of oil or fat to crisp the outside of the meat.
