Moral choice: A vegetarian / vegan will need to supplement for adequate overall nutrition, but this is easy. The food isn't as good so you eat less and stay leaner. Despite all the huckstering, the big studies show no better or worse statistics for longevity or any category of disease when you control for other stuff. You get to claim the moral high ground.
