Dairy contains fat: The strongest determinant of your cholesterol level is your own inherited metabolism. Some people can eat anything they want without elevating cholesterol; others can't. For most of us, dietary intake of saturated fat and cholesterol, which are found in animal products including dairy, increase blood cholesterol levels. Using non- or low-fat dairy products reduces this intake considerably.

Dairy Cholesterol: Dairy historically has been a rich source of saturated fats and cholesterol. Skim milk, non-fat ice cream or sorbet, selected non-fat yogurts, skim milk cheese all have lower cholesterol. So, dairy is not forbidden. You must select non-fat or skim-milk derived dairy. Saturated fats from any animal meat are not healthy for us, either. Avoid these.
