Are you referring to: a polysomnogram (EEG is one portion of a Sleep study)? This allows one to determine what the brain is doing during sleep. That is often the only way to get a really accurate diagnosis for the cause of different sleep conditions.

Seizures: Sometimes a seizure disorder can be the cause of interrupted sleep. That's what the EEG checks for.
