Are colonoscopies and endoscopes accurate in detecting crohns? can they be normal and the person still have crohns?

Yes possible : some Crohn's disease can only affect the small bowel so you'd need to evaluate the full GI tract. If EGD/colonoscopy/capsule are all negative at a time you're having symptoms, then it's pretty unlikely that crohn's is the answer.
