It's not: Much of what you read about diet, cardiovascular health, and cholesterol content of foods is subscience or worse. Cholesterol is a normal component of all animal tissue and you make plenty in your own body. There's no mainstream scientific consensus even today on the "received wisdom" that "saturated fats are bad for you". I'd urge you to eat what you like, sensibly, and stay aerobically fit.
