The experts disagree: mostly there is a small (20-50%) decline in vitamins in frozen versus the very freshest fruits/vegetables (but fiber is unchanged and that's much higher than NOT eating fruit/vegetables). The bacteria / helpful microorganisms in probiotics are HARD to study and HARD to keep alive. The studies vary on whether the probiotics can live all the way to the colon.
