Manage yourself: In the USA, the law requires that if you have a bona fide need to eat gluten-free (i.e., you have celiac disease and/or dermatitis herpetiformis), your college meal service make this option available to you. If you've simply read something on the internet and decided that you need to be gluten-free, you're smart enough to manage your own diet. Give it the "college try."
