Gluten free: Same as with any diet. Keep carbs lower and limit your portion size. Going glutin free should not be a problem. Eat your fruits and lots of fresh vegetables.

Weight gain/gluten: I am not sure i understand your question. I am not aware of gaining weight on gluten free diet. If you supplant gluten laden foods with high calorie ones just to avoid gluten altogether, this is not the right decision.
