Celiac disease: I presume your doctor has diagnosed you with celiac disease. This occurs in people with certain genes and it is not technically an allergy, because the antibody made to gluten is IgA type, and allergy antibodies are ige type. The reaction is not preventable, but avoidance of gluten means the antibodies don't cause inflammation and the illness stops. So far, it's the best treatment.
