Too many to list!: There are many medications used in anesthesia: some induce sleep, some relieve pain, some relax muscles, etc. That's why it takes 4 years of medical school and then 4 years of post-medical school training to become a physician who specializes in anesthesiology. We also use medications to control blood pressure, or treat asthma or heart conditions during surgery. It's a complicated field!
