What to do if i was just wondering. i'd had a sinus ct scan done a few months back and was just wondering how much of a person's brain is included in these scans?

Less than half: The is a difficult question to answer for two reasons. The brain is not amorphous; it has specialized areas like organs. So, even though most of the brain was not included, the important areas were. However, the brain is relatively resistant to radiation. It is less likely to be injured by the low dose used in ct scanning. It is good to check your facility for the dose estimate.

It depends: It depends on the scan parameters. Usually not much, and since the scan is not optimized for the brain, what is visualized is usually limited.
