I need to have a gum graft and was wondering, are you sedated or given nitrous oxide prior to the procedure?

None, just local: All you need is a local anesthesia to perform a gum graft. Check with your dentist/periodontist. A gum graft usually is not a painful procedure. Rarely concious sedation will be used. I would definitely rule out nitrous oxide.
